Freshness













Eu sei que em Portugal não tem estado muito bom tempo, que está tudo farto da chuva, etc e por isso peço-vos para não me levarem a mal por dizer que aqui tem estado um calorão desgraçado! Tenho passado os últimos dias na Gold Coast, em casa da r. e do l. que vivem cá há mais de um ano. Têm sido uns dias fantásticos, perfeitos mesmo. Sinto-me em casa e muito sortuda. A casa deles é de dois andares e tem um pequeno terraço na parte de trás onde estão umas espreguiçadeiras, um trampolim e umas palmeiras. A sala é ampla e tem dois janelões de alto a baixo que dão para esse terraço. Do lado esquerdo da sala está a cozinha, estilo americano, e em frente uma zona de refeições onde a r. também tem todo o seu material de costura. Eu gosto muito da cozinha deles e tenho feito algumas refeições refrescantes por lá.

I know that in Portugal the weather is terrible, that no one can stand any more rain, etc so please don't get mad with me for saying that here it's super hot! I've been in the Gold Coast for the past few days, in r. and l.'s house. I've been having an amazing time. I feel home and very lucky. Their house has two floors and a little backyard with some chairs, a trampoline and a few palm trees. The living room is spacious and has two big windows facing the backyard. On the left side of the living room is the kitchen and right in front they have the dining room which is also where r. keeps her sowing stuff. I really like their kitchen and have been doing some nice refreshing meals there.

Salada refrescante de noodles de arroz 
(para uma pessoa)

Para o molho:
1 dente de alho, ralado
1/4 de chili encarnado, picado
Sumo de meia lima
1 c.sopa de azeite
2 c.sopa de molho de soja

Para a salada:
100gr de noodles de arroz
Vegetais e ervas frescas à escolha: eu usei pepino cortado bem fino, fatias de abacate, cebolinha* cortada às rodelas, folhas de coentros e de hortelã
Cajus ou amendoins tostados
Gomos de lima para servir

Primeiro coza os noodles de acordo com as instruções do pacote (aprox. 2 minutos para usar em saladas). Faça o molho misturando todos os ingredientes numa tigela pequena. Escorra os noodles e passe por água fria para arrefecer. Junte os vegetais, as ervas frescas e os cajus ou amendoins aos noodles e misture tudo bem. Tempere com o molho a gosto e sirva com um gomo de lima.

Rice noodles refreshing salad
(for one)

For the sauce:
1 garlic clove, grated
1/4 of a red chili, finely chopped
Juice of half a lime
1 tbsp olive oil
2 tbsp soya sauce

For the salad:
100gr rice noodles 
Vegetables and fresh herbs: I used finely sliced cucumber, sliced avocado, chopped spring onions, coriander and mint leaves
Toasted cashews or peanuts
Lime wedges to serve

First cook the noodles according to the instructions on the pack (aprox. 2 minutes to use in salads). Make the sauce by stirring all the sauce ingredients in a small bowl. Drain the noodles and run some cold water over them. Add the vegetables, herbs and cashews or peanuts to the noodles and stir well. Season with the sauce to taste and serve with a lime wedge.

The right way








É bom que gostem de salsa pois é o que domina esta salada, ao contrário do bulgur que apenas está lá a dar um ar da sua graça. Segundo Yotam Ottolenghi, é esta a proporção correcta para um tabbouleh feito da maneira certa. Na minha adaptação segui as proporções mais ou menos à risca: mais 10g de bulgur, menos 100g de tomate, um pouco menos de azeite, substituí o allspice, porque não tenho em casa, por cominhos e coentros em pó.

A preparação dos ingredientes é o que vai demorar mais tempo nesta receita. Não caiam na tentação de usar o food processor, nem para o tomate e cebola, nem para as ervas, pois vai ficar tudo uma papa. Usem uma faca grande e bem afiada para ter melhores resultados.


Tabbouleh (receita ligeiramente adaptada da original de Yotam Ottolenghi)

100g de bulgur, já cozinhado
500g de tomate, sem semente, cortado aos cubinhos
2 cebolas pequenas, muito bem picadas
160g de salsa, muito bem picada
30g de folhas de hortelã, muito bem picada
4 c.sopa de sumo de limão
100ml de azeite
Sal
Uma pitada de cominhos e coentros em pó

Numa grande taça, junte todos os ingredientes. Sirva à temperatura ambiente. (fácil, não?!)

You better like parsley a lot because that is what prevails in this salad and not the bulgur. According to Yotam Ottolenghi, this is the right proportion for making tabbouleh the right way. In my recipe I adapted his's just a little bit: 10 more grams of bulgur, 100g less tomatoes, a bit less of olive oil, no allspice because I didn't have it at home and substituted for a pinch of ground cumin and ground coriander.

It's the preparation that's going to take more time in this recipe. Do not use the food processor to chop the tomatoes and the onions, neither the herbs, otherwise everything will turn out mushy. Instead, use a very big share knife for better results.


Tabbouleh (slightly adapted from Yotam's Ottolenghi recipe)

100g bulgur, cooked
500g tomatoes, deseeded, chopped into little pieces
2 small onions, finely chopped
160g parsley, very finely chopped
30g mint leaves, very finely chopped
4 tbsp lemon juice
100ml olive oil
salt
Pinch of ground cumin and coriander

Mix all the ingredients in a big bowl. Serve at room temperature. (very easy!)

I take that back


Há alguns anos atrás disse que não era grande fã de tahini. Chegou altura de voltar atrás no que disse.


Salada morna de grão com molho de tahini

4 chávenas de grão cozido (se cozerem o próprio grão, usem 1 1/2 chávenas de grão seco)
2 c.sopa de tahini
6 c.sopa de azeite
sumo e raspa de 1/2 limão
4 c.sopa de salsa picada
Sal e pimenta a gosto

Numa tigela grande misture o tahini, o azeite, o sumo e raspa de limão e a salsa picada. Junte o grão ainda quente ou morno. Se precisar de aquecer o grão, cubra durante uns minutos com água quente e escorra bem antes de usar. Envolva o grão no molho e tempere com pimenta e sal, se necessário.

A few years ago I said I didn't like tahini very much. It's time to take that back.


Warm chickpea salad with tahini dressing

4 cups cooked chickpeas (if you cook your chickpeas, use 1 1/2 cups of dried chickpeas)
2 tbsp tahini
6 tbsp olive oil
juice and zest of 1/2 lemon
4 tbsp chopped parsley
Salt and pepper to taste

In a bowl mix the tahini, olive oil, lemon juice and zest and the chopped parsley. Add the hot or warm chickpeas. If you need to warm the chickpeas, cover for a few minutes with hot water and drain well before using. Coat the chickpeas in the dressing and season with pepper and salt, if necessary.

Weekdays vs Weekends



Há alturas em que acho que vivo para os fins-de-semana. É que não penso noutra coisa durante a semana a não ser tudo o que vou fazer no próximo sábado e domingo. Mas isso não significa que não aconteça nada de especial durante a semana ou que as minhas semanas sejam aborrecidas e cheias de obrigações de trabalho (há uns dias mais complicados, claro...!). Os dias de semana trazem-me rotina, mas no bom sentido: levanto-me, tomo as refeições e vou dormir mais ou menos à mesma hora, o que é bom para a sanidade mental e faz com que me sinta uma pessoa organizada. É também durante a semana que faço mais desporto: tenho aula de Padel às 2ºs e yoga duas vezes por semana (nos dias que me der mais jeito).  Apesar de não ver televisão, vejo séries com o m. Normalmente encontramo-nos depois do yoga e vemos dois episódios de uma das nossas séries preferidas: Game of Thrones, Breaking Bad e Homeland. Durante a semana também estudo para os dois cursos EdX que estou a tirar e preparo os posts aqui para o blog.

There are times when I think I am living for the coming weekends. During weekdays I just can’t stop thinking about everything I‘m about to do next Saturday and Sunday. However, that doesn’t mean that nothing special happens during weekdays or that my weeks are particularly boring or filled with work obligations (there are a few complicated days though...!). In a good way, weekdays come hand in hand with routine: I wake up, have meals and go to bed more or less at the same time every day, which I find very good for my mental sanity and makes me feel organized. It is during weekdays that I do some sport activities: Padel class on Mondays and yoga twice a week (whenever I can). Although in general I don’t watch TV, I do watch TV series with m. We meet after yoga and we watch a couple of episodes of our favourite TV series: Game of Thrones, Breaking Bad and Homeland. During the week, I also study for the two EdX Courses I’m taking and prepare posts for the blog.


E, num abrir e fechar de olhos, já é fim-de-semana. E fim-de-semana é altura para tomar o pequeno-almoço fora, jogar um jogo de Padel logo pela manhã, conversar com a minha mãe, ir para a praia ou para Azeitão, cozinhar e fotografar muito, estar com amigos, dormir até tarde, almoçar à hora do lanche e jantar às onze da noite, ler revistas e livros, aproveitar uns minutos para não fazer nada, mesmo nada, olhar para o infinito, sonhar acordada com novas receitas (se bem que isso faço durante a semana também!).

And suddenly the weekend arrives. And weekends are the perfect days to go out for breakfast, to play an early morning padel game, to talk with my mum, to go to the beach or to Azeitão, to cook and photograph, to be with friends, to sleep until late, to have lunch at tea time and dinner at eleven p.m., to read magazines and books, to take a few minutes and just do nothing, to look at the infinite and to daydream with new recipes (I do this during the week as well!).



Este fim-de-semana foi assim. Sexta-feira fomos jantar a casa de uns amigos, sábado de manhã tomámos o pequeno-almoço na Padaria Portuguesa e seguimos para o Clube de Padel para um jogo. Preparámos os sacos de fim-de-semana e fomos para Azeitão. Enquanto o m. estudava, eu dava passeios pela vila e apanhava flores. Lanchámos umas bruschetas de ricotta com tomate e morangos, temperadas com azeite e vinagre balsâmico. Jantámos cachorros quentes – não comia um cachorro quente há anos! – e vimos o filme The Hobbit. Bom, o m. viu e eu adormeci enroscada ao cobertor. No domingo de manhã comecei logo a cozinhar duas receitas de espargos, tarte de espargos e espargos com molho vinagrete e ovo cozido, que comemos ao almoço. E à tarde, estendi uma manta sobre o relvado, debaixo da sombra de uma das amendoeiras lá de casa, e fiquei a ler revistas, a descansar e a sonhar por umas horas.

This weekend was just like that. On Friday we had dinner at a friend’s house, Saturday morning we had breakfast at Padaria Portuguesa and went to Clube de Padel for a game. We packed our bags and went to Azeitão. While m. studied, I had a long walk in the village and picked some wild flowers. Around tea time, we had ricotta, tomato and strawberry bruschettas, seasoned with olive oil and balsamic vinegar. For dinner, we had hot dogs – I hadn’t eaten a hot dog for ages! – and late we saw the film The Hobbit. Well, m. saw it, I just felt asleep. On Sunday morning I cooked an asparagus tart and some asparagus with vinaigrette and hard boiled egg sauce that we ate for lunch. And on Sunday afternoon, I just laid on the lawn, under an almond tree, read magazines and books, rested and dreamt for a few hours. 





Espargos com molho vinaigrette à l’oeuf (adaptado do livro “French Provincial Cooking”)

Coza ao vapor meio molho de espargos verdes. Pique muito bem uma chalota ou um pedaço de cebola juntamente com uma colher de sopa de salsa. Junte 3 colheres de sopa de azeite, umas gotas de sumo de limão e tempere com sal e pimenta. Coza um ovo por 3 minutos, retire a gema e junte ao molho. Pique a clara do ovo e junte ao molho. Sirva sobre os espargos.

Asparagus with vinaigrette à l’oeuf sauce (adapted from the book “French Provincial Cooking”)

Steam half a bunch of asparagus. Chop very finely a small shallot or piece of onion with a tablespoon of parsley. Add 3 tablespoons of olive oil, a few drops of lemon juice and season with salt and pepper. Boil an egg for 3 minutes. Scoop the yolk and add it to the sauce. Chop the white and add it to the sauce. Serve the sauce with the asparagus.




Tarte de Espargos

Para a massa:
250g farinha
125g manteiga
1 gema de ovo
3 ou 4 c.sopa água fria

Para o recheio:
Meio a um molho de espargos, cozidos ao vapor
3 ovos
200ml de natas
1 c.sopa de salsa picada
Sal e pimenta a gosto

Trabalhe a farinha com a manteiga com a ponta dos dedos até obter uma mistura areada. Junte a gema e 3 c.sopa de água e misture com um garfo. Se achar necessário junte mais uma c.sopa de água. Una a massa numa bola com as mãos sem amassar em demasia. Enrole numa película aderente e reserve no frigorífico pelo menos durante uma hora. Estenda a massa sobre uma forma de tarte previamente untada e coloque novamente no frigorífico por mais uma hora. Pré-aqueça o forno a 180ºC. Retire a forma do frigorífico, pique o fundo com um garfo e coloque uma folha de papel vegetal ou alumínio sobre a massa. Deite feijões secos sobre o papel e leve a massa ao forno por 20 minutos. Passados 20 minutos, retire os feijões e o papel e coza a massa por mais 10-15 minutos. Para o recheio, bata os ovos com as natas e tempere com sal e pimenta. Coloque os espargos sobre a massa e deite o líquido por cima. Polvilhe com a salsa picada e leve ao forno por 20-30 minutos ou até o recheio estar firme e dourado. Sirva a tarte morna ou à temperatura ambiente.

Asparagus tart

For the dough:
250g flour
125gr butter
1 egg yolk
3 to 4 tbsp cold water


For the filling:
Half to one bunch of asparagus, steamed
3 eggs
200ml cream
1 tbsp chopped parsley
Salt and pepper

Work the flour with the butter with your fingertips until the mixture reassembles breadcrumbs. Add the yolks and 3 tbsp water and mix with a fork. If you find it necessary add another tbsp of water. With your hands, make the dough into a ball without kneading too much. Wrap in cling film and set aside in the refrigerator for at least one hour. Roll out the dough on a greased tart form and place it back in the refrigerator for another hour. Preheat oven to 180 º C. Remove the tart from fridge, prick the bottom with a fork and place a sheet of parchment paper or foil over the dough. Spread dried beans on top of paper and blind bake the dough for 20 minutes. After 20 minutes, remove the beans and paper and bake for another 10-15 minutes. For the filling, beat the eggs with the cream and season with salt and pepper. Place the asparagus over the cooked dough and pour the liquid over the top. Sprinkle with chopped parsley and bake for 20-30 minutes or until the filling is firm and golden. Serve the tart warm or at room temperature.

Simplicity


De volta à simplicidade. Asse uns quantos tomates cereja em rama com um pouco de azeite e sal. Coza a sua massa preferida, ou a que estiver mais à mão. Quando a massa estiver pronta, escorra a água e junte umas quantas colheradas de molho pesto, caseiro ou não, o que der mais jeito. Sirva a massa com os tomates assados e com lascas de queijo mozzarella fresco.

Back to simplicity. Roast a few vine cherry tomatoes with a splash of olive oil a pinch of salt. Cook your favorite pasta, or one that you have in your pantry. When the pasta is cooked, drain it and add a couple of big spoonfuls of pesto sauce, it can be homemade or store-bought, which ever is handier. Serve the pasta with the roasted tomatoes and pieces of fresh mozzarella cheese.

Entertaining...


... for one

Adoro estar com os meus amigos, com o m. e com a minha família, mas há qualquer coisa em estar apenas comigo que me conforta e acalma e que me faz ser mais eu. E foi com este mindset que fui dar um passeio até à praia da Ursa, celebrar um dia lindo de primavera, com sol mas ainda algum frio.

I love spending time with my friends, with m. and with my family, but there's something about being alone that really comforts and calms me allowing me to be more myself. With this mindset, I went for a walk in praia da Ursa to celebrate a beautiful spring sunny but still cold day. 





Aproveitei e inspirei-me nalguns temas da mais recente edição da revista Kinfolk: levei papel e caneta para escrever a uma amiga e ía decidida a apanhar umas flores e ramos selvagens para mais tarde fazer uns arranjos de flores lá para casa. Fui mais além, e agarrei numa caixinha de aguarela azul, num pincel e num caderno de folhas grossas para pintar o que me apetecesse. Pus tudo dentro de uma cesta, juntamente com uma manta, um termos de chá de jasmim, uma maçã e a máquina fotográfica, claro.

I let myself be inspired by the latest Kinfolk magazine issue: I arranged some paper and pen to write to a friend and was determined to pick up some wild flowers and branches to take home. I went a bit further and grabbed a tiny blue watercolor, a thin brush and a few pieces of thick paper to paint whatever would be on my mind on the moment. I put it all inside my beach basket, along with a blanket, hot jasmine tea, an apple and my camera, of course.



... for two

Quando cheguei do meu passeio, já cheia de apetite, decidi fazer um creme de cogumelos para mim e para o m. Sempre fui um pouco céptica em relação a creme de cogumelos. Primeiro porque me faz lembrar sopas de pacote, depois porque os cogumelos têm bastante água e normalmente os cremes de cogumelos são, como o próprio nome indica, cremosos, e isso implica, por exemplo, usar batata, engrossar com farinha, por natas, enfim qualquer uma destas hipóteses não me agrada por aí além. Mas já encontrei alternativa, claro. Já experimentei com feijão branco e mais recentemente com arroz e digo-vos que a minha preferência vai para o arroz. É um creme de risotto de cogumelos: tem bastante textura, é cremoso na mesma, é saudável, e sabe muito a cogumelos, o que é que eu posso querer mais?

Creme de cogumelos (quantidades aproximadas para 4 porções)

15 cogumelos marron de tamanho médio, limpos de terra e cortados ao meio
1 cebola cortada aos pedaços
Entre 1/2 a 1 chávena de arroz integral (previamente demolhado por 8h)
1 c. chá de manteiga
1 fio de azeite
sal a gosto
Água q.b.

Num tacho bem grande salteie durante uns minutos a cebola e os cogumelos com a manteiga e o azeite. Junte o arroz e deixe cozinhar por mais um minuto ainda sem água. Junte água a ferver suficiente para cubrir o arroz e os vegetais e deixe cozer em lume médio. Tempere com sal. A cebola e os cogumelos vão cozer rápido por isso só quando o arroz estiver bem cozido é que pode retirar o tacho do lume e passar com a varinha mágica, adicionando água à medida que for necessário e de modo a criar a consistência desejada. Sirva com iogurte natural e salsa picada.

When I arrived from my stroll, with quite an appetite I must say, I decided to make a mushroom soup for me and for m. I've always been kind of skeptical about mushroom soup. Not only it reminds me of store bought mushroom soups, but also because mushrooms have a lot of water inside them and mushroom soup is quite creamy, it must be thickened with potato, flour, heavy cream, and honestly I don't like any of this options. I've found an alternative of course. I've already tried with white beans and more recently with rice, which is my favorite. It's a mushroom risotto soup: it has o lot of texture, it's still creamy, healthy and it's very mushroom flavored, what more can I ask for?

Mushroom soup (the quantities are approximately for 4 portions)

15 brown mushrooms,  medium size, cleaned and cut in half
1 onion, chopped
Between 1/2 and 1 cup of brown rice (previously soaked for 8h)
1 tsp butter
1 splash of olive oil
Salt to taste
Water

In a large pan stir fry the mushrooms and onion with the butter and olive oil, for a couple  of minutes. Add the rice and let it cook for one minute more without adding water. Add enough boiling water to cover the rice and the vegetables and let it cook in a medium heat. Season with salt. Both the onion and the mushrooms will cook quite rapidly so you can only remove the soup from the heat when the rice is fully cooked. Use your blender/hand mixer to cream the soup and add more water to achieve the desired consistency. Serve with natural yogurt and chopped parsley.

Carrot & Cumin

Não ter tempo de publicar todas as receitas que faço e fotografo é algo que normalmente me chateia, mas desta vez até está a ser conveniente. A verdade é que fiz estas cenouras há meses atrás e ainda não tinha tido a oportunidade de as partilhar convosco. Foi mais ou menos em Maio do ano passado, quando tive o prazer de ser convidada para um almoço convívio organizado pelo Prove de Alpiarça. O Prove, como praticamente todos sabem, é um projecto que associa pequenos produtores agrícolas e que os ajuda a escoar os seus produtos através da venda de cabazes de frutas e legumes. Bom, depois do maravilhoso e saudável almoço ao ar livre, ofereceram-me um saco cheio de cenouras. Mas mesmo cheio delas.

Cenoura é aquele vegetal que quase ninguém gosta mas que duma maneira ou de outra acaba por estar sempre no nosso prato sem nenhum destaque em especial: seja numa sopa de legumes, num arroz de cenoura, numa salada, ou como acompanhamento dum prato de peixe grelhado. Mas com tantas cenouras em mão eu tinha que lhes dar a importância de prato principal. E assim, assei um molho de cenouras com cominhos, tostados e moídos na altura, que servi com couscous, uma colher bem cheia de iogurte grego cremoso, uma mão cheia de amêndoas laminadas tostadas e um pouco de menta picada.

Not having time to post all the recipes I make and photograph is something that usually bothers me. But this time it was actually convenient. Truth is, I’ve roasted these carrots several months ago but hadn’t yet had the opportunity to share them with you. It was more or less in May last year, when I had the pleasure of being invited to a lunch organized by Alpiarça’s Prove. Prove is a project that gathers small farmers and help them sell their products by selling baskets of fruit and vegetables. Well, after a wonderful and healthy lunch outdoors, they offered me a bag of carrots. A big bag full of carrots.

Carrot is a vegetable that almost no one likes but in one way or another it always ends up on our plate without any highlighting in particular: on a vegetable soup, a carrot rice, a salad, or as an accompaniment to grilled fish. But with so many carrots in hand I had to give them the importance of a main course. And so I baked a bunch of carrots with cumin, freshly  toasted and ground, and served it with couscous, a spoon full of creamy Greek yogurt, a handful of toasted slivered almonds and bit of chopped mint.

My New Roots - Workshop with Sarah Britton - Comida Crua \\ Raw Food



Parece que deixei o workshop a meio… Shame on me…! Mas pensando bem, até vem a calhar para “abrir” o apetite para o fim-de-semana que se aproxima. É que a Sarah Britton está de volta, desta vez com sobremesas saudáveis para o Natal! Eu vou assistir no sábado à tarde, e vocês?

A segunda parte do workshop de Setembro, foi sobre comida crua – raw food. O conceito raw food é muito simples: trata-se de ingerir alimentos crus ou cozinhados até por volta dos 40ºC, temperatura a partir da qual as enzimas presentes nos alimentos não sobrevivem.

Uma das primeiras vezes que ouvi falar em raw food foi no episódio da série Sex and the City, quando a Samantha conhece o Jerry “Smith” Jerrod, que é empregado de mesa num restaurante de raw food. Depois desse episódio comecei a pesquisar um pouco sobre raw food e acabei viciadíssima num bolo de chocolate raw, à base de tâmaras e nozes – uma delícia, que mais tarde vim a saber, se assemelha bastante aos raw brownies da Sarah B.

Quem pensa que raw food é só comer saladas e frutas cruas engana-se. Podem-se fazer maravilhas com frutos secos e alguns cereais. Uma das receitas que mais me impressionou foi o molho “sour cream” para acompanhar os raw tacos. É verdadeiramente cremoso e engana o nosso paladar de tão parecido com natas que é. 

A mistura de nozes e especiarias que substitui a carne nos tacos também é uma surpresa. A textura é mais estaladiça que a da carne, claro, mas o sabor é intenso e complexo.

E o que dizer do hummus de polpa de amêndoa?! Também uma opção muito fiel ao hummus tradicional e uma excelente maneira de aproveitar o resto das amêndoas que utilizámos para fazer o leite.

Na maioria das opiniões que tenho recolhido, não é recomendável seguir uma dieta 100% crua, mas é inegável que comer os alimentos no seu estado mais natural e menos processados é uma maior valia para o nosso corpo, saúde e bem-estar. E por isso aqui fica a sugestão de tentarem fazer algumas refeições raw por semana, seja um pequeno-almoço de smoothie nutritivo à base de leite de amêndoa e fruta fresca, ou um almoço de raw tacos - a receita está no site My New Roots!

However, I must say that it is quite appropriate to talk about it now that the weekend is approaching because Sarah Britton is back, this time with healthy desserts for Christmas! The second part of the September’ workshop was about raw food. The raw food concept is very simple: it is about eating foods raw or cooked to more or less 40°C, above which the enzymes present in food do not survive.

One of the first times I heard about raw food was in the episode of the series Sex and the City when Samantha meets Jerry "Smith" Jerrod, who is a waiter in a raw food restaurant. After this episode I started researching a bit about raw food and got really addicted to a raw chocolate cake, with dates and walnuts - a delight, which I later came to know, is very similar Sarah B.’s raw brownies.

If you think that raw food is just eating salads and raw fruits you’re mistaken. You can do wonders with dry fruits and some cereals. One of the recipes that impressed me the most was the "sour cream" sauce of the raw tacos. It's really creamy and tricks our tastebuds because it is so similar with cream. The mixture of walnuts and spices that replace the meat in tacos is also a surprise. The texture is crispier than meat, of course, but the flavour is intense and complex.

And what about the almond pulp hummus?! Also a very truthful option to traditional hummus and a great way to enjoy the rest of the almonds we used to make milk.

Most of the opinions I have gathered, say it is not recommended to follow a 100% raw diet, but it is undeniable that eating foods in their most natural state and less processed is great to our body, health and wellness. Being so, how about trying to make a few raw meals a week, like having a nutritious smoothie for breakfast made with almond milk and fresh fruit, or a couple of raw tacos for lunch - check the recipe at My New Roots!
